Energy Bites – Let the good times roll

In the past stressful weeks I needed a shot of energy in between. So I decided to make some energy balls or energy bites, whatever you want to call them. Or however you want to shape them. They are perfect to have during the mid-afternoon low at the office or after a workout at the gym. Best thing is, they have so many nutrients, but hey, they got peanut butter, so they are sooo yummy! You can also swap the ingredients around and try different nut butters (just look out for a not too liquid consistency), nuts and seeds, or you could add some chopped dried fruit like cranberries.

Energy Bites (or Energy Balls) – a pile of goodness

Here is my take on the energy bites; yields 15 to 20 balls:

1/2 cup peanut butter

1/2 cup agave nectar

1 cup rolled oats

1/2 cup ground hazelnuts

3 tablespoons ground flax seed

2 tablespoons sesame seeds

2 tablespoons cocoa nibs

In a mixing bowl, mix the peanut butter and agave. Add the oats, but not all at one, that will be easier to mix. Then add the remaining ingredients and mix well. If the mixture is sticky, put it in the fridge for about 30 minutes. Otherwise you can start rolling or shaping straight away. I rolled them in the size a bit smaller than a walnut and got about 17 energy balls. They are an awesome addition to any lunch box. Keep them in the fridge for about a week (you will gobble them up within a few days anyway). Enjoy!
