Alas, the summer heat has cooled down a little this week, I am still trying to enjoy as much of the summer as I can. You know, winter is coming… One of my favourite fruits in the summer is watermelon. I am not a huge fan of the other melon varieties, however. But watermelon is so refreshing and colourful. I have been wanting to try it out in a salad for quite a while, and finally did this week. IT IS SO GOOD! Seriously, I have put so many other fruits in salads, but never watermelon. I will do so much more often from now on. This salad is super refreshing and light. With the spinach and the arugula you get your greens on. And it looks very pretty. You can serve it as a light lunch with some nice, fresh bread, or serve it as a side salad at a summer dinner or picnic. Plus, it is thrown together in like 5 minutes.
Here is what you need for 2 lunch servings (makes about 3-4 side servings):
2 packed cups of baby leave spinach
1.5 packed cup of arugula leaves
3 cups of diced watermelon (for me that was about 1/4 of a melon)
leaves from one stalk of fresh mint (about 2-3 tablespoons when chopped)
generous handful of black olives
juice from 1 lemon
3 tablespoons of good olive oil
salt & freshly cracked pepper
Place the washed and dried spinach and arugula leaves in a big bowl. Chop the watermelon in bite-size pieces and add to the bowl. Add the chopped mint leaves and olives. Prepare the dressing by mixing the lemon juice with the olive oil. Shake or stir in a glass until the oil has slightly emulsified. Add to the salad. Add salt and pepper to taste. Give it a good mix and you are all set. Serve the salad immediately as the watermelon gives off some juice. If not serving straight away, keep the watermelon and dressing separate, and add once ready to serve. Enjoy!
